If there is such a thing as a conversation-starter salt, this is it! Unbelievably shaped by nature 515 feet below sea level, this round nugget of salty goodness is tumbled in the sea and shaped into perfect little white spheres, all thanks to Mother Nature's water, wind, and surf. With its big bold pearly presence, its taste is surprisingly on the mild side. While we love sprinkling the very smallest of the pearls on top of a finished dish, we grind the medium and large spheres into a beautiful snowy white powder, which still packs quite the crunch!
You can, and should, reach for this every day, no matter what you are cooking. We have found it is particularly delicious on raw proteins, such as sushi grade salmon or beef tartar, to bring out the meat's full flavor. And, just thinking of a perfectly ripe avocado with a few grinds of this on top, makes our mouths water. Roasted or sauteed veggies or greens are also perfect candidates. Remember that you don't have to save this for the finishing element of a dish, but can layer in as soon as you start your French mirepoix (onion, carrots and celery) or Latin sofrito (onions, peppers, cilantro and garlic) as the base for your next sauce, soup, or stew. And, if nothing else, place this salt on the table next time you have a dinner party and let the conversation begin!
